SV pork chops for dinner with air fyer potatoes and brocolli. The chops were first salted overnight and then prior to cooking added salt, pepper and a curry blend. Before SVing I seared both sides for about 1 minute and then cooked at 144 for 1 1/2 hours. Then seared again before serving.DSC06287.jpeg
 
Sous vide is the only way to do pork and steaks IMO and I am devout Big Green Egghead. I do chops in SV first 145 up to 4 hours. Finish at 600 degrees on the egg for 3 minutes total turning 3x so each side gets 1-1/2 minutes. Use favorite spicy rub and olive oil. Perfection every time.
 
It took me a couple of seconds to think sous vide. SV to me means sailing vessel. At first, I thought you bought a sailboat and named it Pork Chop. Lol
